🍽️ Shrimp and Apricot Skewers

Ingredients
- 500 g large shrimp (in the shell)
- 1 tbsp lemon juice
- salt
- pepper (from the mill)
- olive oil (for brushing)
- 1 small can apricots
- wooden skewers
Instructions
- 1. Cut open the shells of the shrimp with kitchen scissors.
- 2. Remove the dark vein from the shrimp, but keep the shells on.
- 3. Rinse the shrimp under cold water.
- 4. Pat the shrimp dry with kitchen paper.
- 5. Drizzle the shrimp with lemon juice.
- 6. Let the apricots drain.
- 7. Pat the shrimp dry again.
- 8. Season the shrimp with salt and pepper.
- 9. Brush the shrimp with olive oil.
- 10. Thread shrimp and apricot halves alternately onto the skewers.
- 11. Oil the grill grate.
- 12. Grill the skewers over high heat for approx. 2 minutes per side.
