  1. 1. Cut open the shells of the shrimp with kitchen scissors.
  2. 2. Remove the dark vein from the shrimp, but keep the shells on.
  3. 3. Rinse the shrimp under cold water.
  4. 4. Pat the shrimp dry with kitchen paper.
  5. 5. Drizzle the shrimp with lemon juice.
  6. 6. Let the apricots drain.
  7. 7. Pat the shrimp dry again.
  8. 8. Season the shrimp with salt and pepper.
  9. 9. Brush the shrimp with olive oil.
  10. 10. Thread shrimp and apricot halves alternately onto the skewers.
  11. 11. Oil the grill grate.
  12. 12. Grill the skewers over high heat for approx. 2 minutes per side.
