🥗 Tropical Shrimp and Pineapple Salad with Hard-Boiled Egg

Ingredients
- 8 hard-boiled eggs
- 1 baby pineapple
- 200 g shrimp (kitchen-ready cooked)
- 2 tbsp capers
- 1 container yogurt
- 150 g mayonnaise (from the jar)
- juice of one lemon
- 1 tbsp curry powder
- salt (pepper)
- Tabasco
- beet leaf (for garnishing)
Instructions
- 1. Peel the pineapple completely.
- 2. Cut the pineapple into quarters.
- 3. Remove the hard core from the center of the pineapple pieces.
- 4. Cut the hard-boiled eggs into quarters.
- 5. Cut the pineapple pieces into thin strips.
- 6. Add the pineapple strips, the shrimp, the capers, and the eggs to a large bowl.
- 7. Whisk the yogurt, mayonnaise, and lemon juice in a small bowl.
- 8. Stir until a smooth sauce forms.
- 9. Season the sauce with salt, pepper, and Tabasco to your liking.
- 10. Pour the sauce over the salad.
- 11. Mix everything well.
- 12. Serve the dish garnished with fresh beet leaves.
