  5. 5. Place the fish onto this prepared plate.
  6. 6. Peel half of the ginger.
  7. 7. Grate the ginger finely.
  8. 8. Place the grated fibers into a fine sieve.
  9. 9. Squeeze the juice out of the ginger.
  10. 10. Mix the ginger juice with the soy sauce.
  11. 11. Drizzle the sauce over the fish.
  12. 12. Pour some sauce into the cuts you made earlier.
  13. 13. Peel the remaining ginger.
  14. 14. Cut the ginger into thin matchsticks.
  15. 15. Clean the spring onions.
  16. 16. Wash the spring onions.
  17. 17. Cut the spring onions diagonally into pieces about 1 cm long.
  18. 18. Crush the black beans slightly with a knife.
  19. 19. Crumble the chili peppers.
  20. 20. Mix the ginger, spring onions, beans, chili, and oil.
  21. 21. Place the entire mixture over the fish.
  22. 22. Wash the coriander leaves.
  23. 23. Shake the coriander dry.
  24. 24. Pluck the leaves from the stems.
  25. 25. Tear the leaves into rough pieces.
  26. 26. Sprinkle the coriander pieces over the fish.
  27. 27. Rinse the pork netting thoroughly under cold water.
  28. 28. Drape the pork netting over the plate with the fish.
  29. 29. Fill a wok with about 5 cm of water.
  30. 30. Place a rack or an upside-down plate into the wok.
  31. 31. Place the plate with the fish on the rack.
  32. 32. Ensure the fish is above the water level.
  33. 33. Cover the wok with a lid.
  34. 34. Bring the water to a boil over high heat.
  35. 35. Steam the fish for 20 to 25 minutes.
  36. 36. Remove the pork netting before serving.
  37. 37. Drizzle the finished fish with sesame oil.
