🍽️ Crispy Goose Legs with Savory Lentils and Apples

Ingredients
- 250 g lentils
- 4 goose legs
- salt
- pepper from the mill
- 4 tbsp oil
- 250 ml clear instant broth
- 4 apples
- 2 onions
- thyme
- 1 tbsp vinegar
Instructions
- 1. Rinse the lentils under cold water.
- 2. Place the lentils in a pot with fresh water.
- 3. Simmer the lentils for 35 minutes until they are tender.
- 4. Rinse the goose legs under running water.
- 5. Thoroughly dry the legs with a kitchen towel.
- 6. Rub the legs with salt and pepper.
- 7. Heat 3 tablespoons of oil in a large casserole pot.
- 8. Fry the goose legs on all sides until golden brown.
- 9. Place the fried legs into a baking dish.
- 10. Preheat the oven to 180 degrees (convection: 160 degrees, gas: level 2-3).
- 11. Place the baking dish in the oven.
- 12. Cook the legs for 1 ½ hours.
- 13. Gradually pour broth over the legs during the cooking time.
- 14. Wash the apples under running water.
- 15. Cut the apples into four equal quarters.
- 16. Remove the core from the apple quarters.
- 17. Cut the apple pieces into thin wedges.
- 18. Peel the onions.
- 19. Cut the onions into wedges as well.
- 20. Rinse the thyme and marjoram under cold water.
- 21. Strip the small leaves from the thyme stems.
- 22. Pluck the leaves from the marjoram.
- 23. Heat the remaining oil in a frying pan.
- 24. Fry the apple wedges briefly in the hot oil.
- 25. Add the stripped herbs and onion wedges to the pan.
- 26. Sauté the vegetables for a short time.
- 27. Drain the cooked lentils in a sieve.
- 28. Remove the baking dish from the oven 20 minutes before the end of the cooking time.
- 29. Add the drained lentils and the fried apple vegetables to the goose legs.
- 30. Return the baking dish to the oven.
- 31. Season the dish with vinegar, salt, and pepper to taste.
