Ingredients
- 2.5 l good vinegar (to your liking)
- 1 sprig bay leaf
- 0.5 garlic bulb
- 2 sprigs tarragon
- 4 small chili peppers
- 3 sprigs thyme
- 1 bunch sage leaves
- 1 sprig rosemary
Instructions
- 1. Place a bay leaf into a clean bottle.
- 2. Fill a second bottle with peeled garlic cloves and fresh tarragon.
- 3. Make small slits in chili peppers using a sharp knife.
- 4. Add the prepared chili peppers and fresh thyme sprigs into a third bottle.
- 5. Fill a fourth bottle with fresh sage leaves.
- 6. Add fresh rosemary sprigs into the fifth and final bottle.
- 7. Pour exactly 500 milliliters of vinegar into each of the five bottles.
- 8. Make sure that all herbs and spices are completely covered by the liquid.
- 9. Seal the bottles tightly with their lids.
- 10. Store the bottles in a dark place.
- 11. Let the flavors infuse into the vinegar for two to four weeks.
- 12. Strain the finished vinegar through a sieve if you prefer.
- 13. You can also leave the solid ingredients in the vinegar if you like.
