  1. 1. Place a bay leaf into a clean bottle.
  2. 2. Fill a second bottle with peeled garlic cloves and fresh tarragon.
  3. 3. Make small slits in chili peppers using a sharp knife.
  4. 4. Add the prepared chili peppers and fresh thyme sprigs into a third bottle.
  5. 5. Fill a fourth bottle with fresh sage leaves.
  6. 6. Add fresh rosemary sprigs into the fifth and final bottle.
  7. 7. Pour exactly 500 milliliters of vinegar into each of the five bottles.
  8. 8. Make sure that all herbs and spices are completely covered by the liquid.
  9. 9. Seal the bottles tightly with their lids.
  10. 10. Store the bottles in a dark place.
  11. 11. Let the flavors infuse into the vinegar for two to four weeks.
  12. 12. Strain the finished vinegar through a sieve if you prefer.
  13. 13. You can also leave the solid ingredients in the vinegar if you like.
