  2. 2. Peel the onion and cut it into small cubes as well.
  3. 3. Heat oil in a frying pan and fry the potato cubes until golden brown over medium heat for about 5 to 6 minutes.
  4. 4. Add the onion cubes to the pan and fry everything for another 4 minutes.
  5. 5. Season the potato and onion mixture with salt and pepper to taste.
  6. 6. Wash the tomatoes and cut each one in half.
  7. 7. Place the tomato halves on top of the potato mixture in the pan.
  8. 8. Crack the eggs and place them directly onto the vegetables in the pan.
  9. 9. Season the eggs again with a little salt and pepper.
  10. 10. Spread the cheese evenly over the eggs and vegetables.
  11. 11. Place the pan under the hot grill of the oven and bake for about 5 minutes until the cheese has melted.
  12. 12. Sprinkle the finished dish with fresh chives and serve immediately.
