🍳 English-style breakfast with fried potatoes and fried eggs

Ingredients
- 800 g boiled potatoes (from the day before)
- 1 onion
- 2 tbsp vegetable oil
- salt
- pepper (from the mill)
- 200 g cherry tomatoes
- 4 eggs
- 1 tbsp chive rings
Instructions
- 1. Peel the potatoes and cut them into small cubes.
- 2. Peel the onion and cut it into small cubes as well.
- 3. Heat oil in a frying pan and fry the potato cubes until golden brown over medium heat for about 5 to 6 minutes.
- 4. Add the onion cubes to the pan and fry everything for another 4 minutes.
- 5. Season the potato and onion mixture with salt and pepper to taste.
- 6. Wash the tomatoes and cut each one in half.
- 7. Place the tomato halves on top of the potato mixture in the pan.
- 8. Crack the eggs and place them directly onto the vegetables in the pan.
- 9. Season the eggs again with a little salt and pepper.
- 10. Spread the cheese evenly over the eggs and vegetables.
- 11. Place the pan under the hot grill of the oven and bake for about 5 minutes until the cheese has melted.
- 12. Sprinkle the finished dish with fresh chives and serve immediately.
