  1. 1. Thoroughly wash the bean sprouts.
  2. 2. Let the sprouts drain well in a sieve.
  3. 3. Roughly chop the sprouts.
  4. 4. Wash the tomatoes.
  5. 5. Cut out the hard stem bases in a wedge shape.
  6. 6. Quarter the tomatoes.
  7. 7. Remove the core.
  8. 8. Dice the tomato flesh finely.
  9. 9. Wash the spring onions.
  10. 10. Remove the dry ends.
  11. 11. Slice the spring onions into thin rings.
  12. 12. Dice the smoked pork slices very small.
  13. 13. Peel the ginger.
  14. 14. Finely chop the ginger.
  15. 15. Place all prepared ingredients into a bowl.
  16. 16. Add the soy sauce.
  17. 17. Add the egg.
  18. 18. Mix the filling thoroughly.
  19. 19. Lay a pastry sheet flat on the work surface.
  20. 20. Brush the pastry sheet with a little water.
  21. 21. Place a portion of filling in the center.
  22. 22. Roll the pastry sheet starting from the wide end.
  23. 23. Fold in the side ends before the final turn.
  24. 24. Heat the oil strongly in a deep pan or wok.
  25. 25. Add the rolls in batches to the hot oil.
  26. 26. Ensure the seam side is facing downwards.
  27. 27. Fry the rolls for about 3 minutes on each side until golden brown.
  28. 28. Remove the finished rolls with a slotted spoon.
  29. 29. Let the oil drain on kitchen paper.
  30. 30. Serve the spring rolls hot.
