🍽️ Crispy Spring Rolls with Smoked Pork

Ingredients
- 100 g fresh bean sprouts
- 160 g tomatoes (2 tomatoes)
- 2 spring onions
- 100 g sliced smoked pork
- 5 g ginger (1 piece)
- 1 tsp soy sauce
- 1 egg
- 8 sheets filo dough
- 7 tbsp rapeseed oil
Instructions
- 1. Thoroughly wash the bean sprouts.
- 2. Let the sprouts drain well in a sieve.
- 3. Roughly chop the sprouts.
- 4. Wash the tomatoes.
- 5. Cut out the hard stem bases in a wedge shape.
- 6. Quarter the tomatoes.
- 7. Remove the core.
- 8. Dice the tomato flesh finely.
- 9. Wash the spring onions.
- 10. Remove the dry ends.
- 11. Slice the spring onions into thin rings.
- 12. Dice the smoked pork slices very small.
- 13. Peel the ginger.
- 14. Finely chop the ginger.
- 15. Place all prepared ingredients into a bowl.
- 16. Add the soy sauce.
- 17. Add the egg.
- 18. Mix the filling thoroughly.
- 19. Lay a pastry sheet flat on the work surface.
- 20. Brush the pastry sheet with a little water.
- 21. Place a portion of filling in the center.
- 22. Roll the pastry sheet starting from the wide end.
- 23. Fold in the side ends before the final turn.
- 24. Heat the oil strongly in a deep pan or wok.
- 25. Add the rolls in batches to the hot oil.
- 26. Ensure the seam side is facing downwards.
- 27. Fry the rolls for about 3 minutes on each side until golden brown.
- 28. Remove the finished rolls with a slotted spoon.
- 29. Let the oil drain on kitchen paper.
- 30. Serve the spring rolls hot.
