🍰 Cranberry Fruit Cake

Ingredients
- 70 g dried pears
- 70 g dried apricots
- 125 g cranberries
- 60 ml lukewarm milk (3.5% fat)
- 1 cube fresh yeast (42 g)
- 1 tsp honey
- 500 g whole wheat flour
- 1 pinch salt
- 100 g melted butter
- 3 tsp orange zest
- 100 g apple sauce (no added sugar)
- 1 tsp gingerbread spice
- 75 g chopped walnut kernels
- 100 g raisins
- 1 egg yolk
- 2 tbsp milk (3.5% fat)
Instructions
- 1. Cut the dried fruits into small pieces.
- 2. Cut the cranberries into small pieces.
- 3. Dissolve the yeast in the lukewarm milk.
- 4. Stir the honey into the milk-yeast mixture until smooth.
- 5. Put the flour into a large mixing bowl.
- 6. Add salt, butter, orange zest, apple puree, and gingerbread spice to the flour.
- 7. Pour the yeast mixture over the other ingredients.
- 8. Knead the ingredients into a smooth dough using the dough hook of the hand mixer.
- 9. Fold the diced dried fruits into the dough.
- 10. Fold the nuts into the dough.
- 11. Fold the raisins into the dough.
- 12. Cover the bowl with the dough.
- 13. Let the dough rise in a warm place for 45 minutes.
- 14. Sprinkle some flour on a clean work surface.
- 15. Knead the dough briefly on the floured surface.
- 16. Shape the dough into a loaf.
- 17. Line a baking sheet with baking paper.
- 18. Place the dough loaf on the prepared baking sheet.
- 19. Cover the dough loaf.
- 20. Let the dough loaf rise in a warm place for another 30 minutes.
- 21. Whisk the egg yolk with a little milk in a small bowl.
- 22. Brush the dough loaf with the egg yolk-milk mixture.
- 23. Preheat the oven to 180 °C (160 °C with convection or gas level 2–3).
- 24. Bake the cake in the oven for about 75 minutes.
- 25. Remove the cake from the oven.
- 26. Let the cake cool completely.
