  3. 3. Dissolve the yeast in the lukewarm milk.
  4. 4. Stir the honey into the milk-yeast mixture until smooth.
  5. 5. Put the flour into a large mixing bowl.
  6. 6. Add salt, butter, orange zest, apple puree, and gingerbread spice to the flour.
  7. 7. Pour the yeast mixture over the other ingredients.
  8. 8. Knead the ingredients into a smooth dough using the dough hook of the hand mixer.
  9. 9. Fold the diced dried fruits into the dough.
  10. 10. Fold the nuts into the dough.
  11. 11. Fold the raisins into the dough.
  12. 12. Cover the bowl with the dough.
  13. 13. Let the dough rise in a warm place for 45 minutes.
  14. 14. Sprinkle some flour on a clean work surface.
  15. 15. Knead the dough briefly on the floured surface.

  22. 22. Brush the dough loaf with the egg yolk-milk mixture.
  23. 23. Preheat the oven to 180 °C (160 °C with convection or gas level 2–3).
  24. 24. Bake the cake in the oven for about 75 minutes.
  25. 25. Remove the cake from the oven.
  26. 26. Let the cake cool completely.
