🍰 Moist Fruit Gugelhupf with Lime

Ingredients
- 1 tsp Butter (for the pan)
- 2 tbsp almond flakes
- 250 g soft butter
- 150 g coconut blossom sugar
- 6 eggs
- 500 g whole wheat flour
- 1 packet baking powder
- 0.125 l milk (3.5% fat)
- 1 lime
- 100 g dried fruit (apple, pear, apricot)
- 2 tbsp raisins
- powdered sugar from birch sugar (for dusting)
Instructions
- 1. Grease the Gugelhupf mold generously with butter or oil.
- 2. Dust the greased mold with sliced almonds so the cake does not stick later.
- 3. Cut the dried fruits into small cubes.
- 4. Squeeze the lime to get the juice.
- 5. Beat the butter with the coconut blossom sugar until creamy and fluffy.
- 6. Add the eggs one by one and continue stirring until the sugar is completely dissolved.
- 7. Mix the flour with the baking powder in a separate bowl.
- 8. Sift about half of the flour mixture over the batter and fold it in gently.
- 9. Add four tablespoons of milk and stir them in.
- 10. Sift the remaining flour over it and mix everything into a smooth, pliable batter.
- 11. Preheat the oven to 175 degrees (150 degrees for fan-forced or gas mark 2).
- 12. Mix the lime juice, raisins, and cut fruits into the batter.
- 13. Pour the batter into the prepared mold and smooth the surface.
- 14. Bake the cake for about 50 minutes in the preheated oven.
- 15. Let the cake cool for a short moment before turning it out of the mold.
- 16. Invert the cake onto a wire rack and let it cool completely.
- 17. Dust the cooled cake with birch sugar powdered sugar before serving.
