  1. 1. Make a cross-shaped cut on the top of the apricots with a sharp knife.
  2. 2. Pour boiling water over the apricots to blanch them (cook briefly in boiling water).
  3. 3. Peel the skin off the apricots.
  4. 4. Halve the apricots and remove the pits.
  5. 5. Cut the apricots into small wedges.
  6. 6. Wash the strawberries thoroughly.
  7. 7. Remove the green stems and leaves from the strawberries.
  8. 8. Cut the strawberries into small pieces.
  9. 9. Peel the ginger.
  10. 10. Finely chop the ginger.
  11. 11. Set aside 16 apricot wedges and put them aside.
  12. 12. Place the remaining apricots, the chopped ginger, the orange juice, the apricot juice, the lime juice, and the grated zest of the orange and lime into a blender.
  13. 13. Blend the mixture until smooth.
  14. 14. Sweeten the chilled soup to taste with maple syrup.
  15. 15. Pour the chilled soup into bowls or plates.
  16. 16. Distribute the reserved apricot wedges and the cut strawberries on the surface.
  17. 17. Garnish the dish with fresh lemon balm leaves.
  18. 18. Serve the chilled soup cold.
