🍽️ Moist Apple and Nut Loaf

Ingredients
- 700 g sour Boskop apples
- 200 g cane sugar
- 125 g chopped hazelnuts
- 100 g dried apricots
- 100 g plums
- 100 g raisins
- 150 g butter
- 3 egg yolks
- 250 g whole wheat flour
- 250 g rye flour
- 1.5 packets baking powder
- 2 tbsp cocoa powder
- 2 tsp cinnamon
- 1 tsp ground cloves
- 2 tbsp rum
- 3 tsp grated lemon zest
- butter (for the pan)
- flour (for dusting)
- powdered sugar (for dusting)
Instructions
- 1. Quarter the apples.
- 2. Peel the apples.
- 3. Remove the core.
- 4. Grate the apple pieces coarsely.
- 5. Mix the grated apples with the sugar.
- 6. Cover the bowl.
- 7. Let the apple-sugar mixture sit overnight.
- 8. Cut the apricots into small cubes.
- 9. Cut the plums into small cubes.
- 10. Add the apricot cubes to the apples.
- 11. Add the plum cubes to the apples.
- 12. Add the raisins to the apple mixture.
- 13. Add the nuts to the apple mixture.
- 14. Mix all ingredients well together.
- 15. Beat the butter until fluffy.
- 16. Beat the egg yolks until fluffy.
- 17. Mix the first flour with the second flour.
- 18. Add the baking powder to the flour mixture.
- 19. Add the cocoa to the flour mixture.
- 20. Add the cinnamon to the flour mixture.
- 21. Add the cloves to the flour mixture.
- 22. Add the lemon juice gradually to the foam mixture.
- 23. Add the grated lemon zest to the foam mixture.
- 24. Work the apple-sugar mixture into the foam mixture.
- 25. Work the dried fruits and nuts into the foam mixture.
- 26. Grease the loaf pan.
- 27. Dust the loaf pan with flour.
- 28. Put the dough into the prepared pan.
- 29. Smooth the surface of the dough.
- 30. Preheat the oven to 200 degrees.
- 31. Place the pan in the center of the oven.
- 32. Bake the loaf for approx. 1 hour.
- 33. Let the finished loaf cool in the pan for approx. 10 minutes.
- 34. Turn the loaf out of the pan.
- 35. Let the loaf cool completely on a wire rack.
- 36. Dust the cold loaf with powdered sugar.
- 37. Slice the loaf.
