🍰 Small Fruit Tartlets

Ingredients
- 200 g flour
- 80 g butter
- 80 g powdered sugar
- 1 egg yolk
- 1 pinch salt
- 250 g double cream cheese
- 1 tsp lemon juice
- 1 packet cream stabilizer
- 50 g powdered sugar
- 300 g berries
- 1 fig
- 1 star fruit
- 1 piece mango
- 1 kiwi
- fat (for the mold)
- breadcrumbs (for the mold)
Instructions
- 1. Knead the dough ingredients quickly into a shortcrust pastry.
- 2. Shape the dough into a ball.
- 3. Wrap the dough ball in cling film.
- 4. Place the foil in the refrigerator for 30 minutes.
- 5. Grease the tartlet molds well.
- 6. Sprinkle crumbs into the greased molds.
- 7. Roll out the dough on a floured work surface.
- 8. Cut circles from the dough using the molds.
- 9. Press the dough circles into the molds.
- 10. Prick the dough bases several times with a fork.
- 11. Preheat the oven to 180 degrees.
- 12. Bake the tartlet bases in the oven for 8 minutes.
- 13. Whisk cream cheese, lemon juice, vanilla sugar, and powdered sugar into a cream.
- 14. Remove the tartlets from the oven.
- 15. Let the tartlets cool down completely.
- 16. Carefully turn the tartlets out of the molds.
- 17. Fill the cream into a piping bag.
- 18. Pipe the cream into the cooled tartlets.
- 19. Wash the berries thoroughly.
- 20. Pat the berries dry.
- 21. Peel the kiwi.
- 22. Slice the kiwi into thin slices.
- 23. Slice the starfruit.
- 24. Cut the mango into pieces.
- 25. Cut the fig into pieces.
- 26. Decoratively arrange the berries and fruits on the tartlets.
- 27. Serve the tartlets and enjoy them.
