🍽️ Crunchy Fruit and Nut Bread

Ingredients
- 120 g dried pears
- 120 g dried plums
- 120 g dried figs
- 120 g raisins
- 120 g currants
- 50 g almonds
- 50 g hazelnuts
- 140 g spelt whole wheat flour
- 0.5 level tsp anise powder
- 0.5 cube yeast (approx. 21 g)
- 3 tbsp honey
- 0.5 tsp cinnamon powder
- 120 g apricot jam
Instructions
- 1. Dice the pears into small cubes.
- 2. Place the pear cubes in a large bowl filled with plenty of water.
- 3. Let the pears soak in the water overnight.
- 4. The next day, bring the water and pears to a boil.
- 5. Finely chop the plums, figs, raisins, and currants.
- 6. Place the chopped fruits in a bowl.
- 7. Pour the hot water with the pears over the dried fruits.
- 8. Let the dried fruits swell until they are plump and fully soaked.
- 9. Coarsely chop the almonds and hazelnuts.
- 10. Drain the soaked fruits.
- 11. Mix the flour with the anise.
- 12. Press a well into the center of the flour mixture.
- 13. Crumble the yeast into the well.
- 14. Stir everything with 3 to 4 tablespoons of lukewarm water into a paste.
- 15. Lightly dust the surface with flour.
- 16. Cover the bowl.
- 17. Let the dough rise in a warm place for about 15 minutes.
- 18. Drizzle the honey over the dough.
- 19. Sprinkle the cinnamon on top.
- 20. Knead everything with 4 tablespoons of lukewarm water into a smooth dough.
- 21. Cover the dough.
- 22. Let the dough rise for another 45 minutes.
- 23. Now add the drained fruits, nuts, almonds, citron, and orange peel.
- 24. Knead everything well.
- 25. Let the dough rise covered for another 30 minutes.
- 26. Shape the finished dough into a loaf.
- 27. Place it on a baking sheet lined with baking paper.
- 28. Preheat the oven to 200 degrees conventional heat (or 180 degrees fan-forced or gas level 2 to 3).
- 29. Bake the bread for about 1 hour.
- 30. For a crispier crust, you can place a heatproof bowl filled with water on the bottom of the oven.
- 31. Remove the finished bread from the oven.
- 32. Spread it evenly with the jam.
- 33. Let it cool completely before slicing.
