  2. 2. Place the pear cubes in a large bowl filled with plenty of water.
  3. 3. Let the pears soak in the water overnight.
  4. 4. The next day, bring the water and pears to a boil.
  5. 5. Finely chop the plums, figs, raisins, and currants.
  6. 6. Place the chopped fruits in a bowl.
  7. 7. Pour the hot water with the pears over the dried fruits.
  8. 8. Let the dried fruits swell until they are plump and fully soaked.
  9. 9. Coarsely chop the almonds and hazelnuts.
  10. 10. Drain the soaked fruits.
  11. 11. Mix the flour with the anise.
  12. 12. Press a well into the center of the flour mixture.
  13. 13. Crumble the yeast into the well.
  14. 14. Stir everything with 3 to 4 tablespoons of lukewarm water into a paste.
  15. 15. Lightly dust the surface with flour.
  16. 16. Cover the bowl.
  17. 17. Let the dough rise in a warm place for about 15 minutes.
  18. 18. Drizzle the honey over the dough.
  19. 19. Sprinkle the cinnamon on top.
  20. 20. Knead everything with 4 tablespoons of lukewarm water into a smooth dough.
  21. 21. Cover the dough.
  22. 22. Let the dough rise for another 45 minutes.
  23. 23. Now add the drained fruits, nuts, almonds, citron, and orange peel.
  24. 24. Knead everything well.
  25. 25. Let the dough rise covered for another 30 minutes.
  26. 26. Shape the finished dough into a loaf.
  27. 27. Place it on a baking sheet lined with baking paper.
  28. 28. Preheat the oven to 200 degrees conventional heat (or 180 degrees fan-forced or gas level 2 to 3).
  29. 29. Bake the bread for about 1 hour.
  30. 30. For a crispier crust, you can place a heatproof bowl filled with water on the bottom of the oven.
  31. 31. Remove the finished bread from the oven.
  32. 32. Spread it evenly with the jam.
  33. 33. Let it cool completely before slicing.
