🍽️ Fruity Chicken Curry with Apple

Ingredients
- 500 g chicken breast fillet
- 2 apples
- 1 onion
- 2 carrots
- 1 garlic clove
- 2 tbsp peanut oil
- 1 tbsp curry powder
- 150 ml poultry broth
- 150 g peas
- 2 tbsp apple cider vinegar
- 1 tsp brown honey
- 1 tsp cornstarch
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the chicken meat under cold water and pat it dry with a kitchen towel.
- 2. Cut the meat into small cubes.
- 3. Wash the apple thoroughly.
- 4. Cut the apple into four quarters and remove the core.
- 5. Cut the apple pieces into bite-sized chunks.
- 6. Peel the onion and cut it into fine cubes.
- 7. Peel the carrots and cut them into small batons.
- 8. Peel the garlic clove and chop it finely.
- 9. Heat oil in a large pan or pot.
- 10. Fry the chicken meat in the hot oil.
- 11. Add the garlic, onions, carrots, and apple pieces to the pan.
- 12. Sauté the vegetables and apple briefly.
- 13. Stir the curry powder into the mixture.
- 14. Deglaze the mixture with a little broth.
- 15. Add the peas, vinegar, and honey.
- 16. Let the curry simmer on low heat for about 10 minutes.
- 17. Add more broth if necessary if the sauce becomes too dry.
- 18. Check if the vegetables are cooked but still firm to the bite.
- 19. Mix the starch smoothly with 1 to 2 tablespoons of water.
- 20. Add the starch solution to the sauce to thicken it slightly.
- 21. Season the curry to taste with salt and pepper.
- 22. Serve the curry with rice and chips as desired.
