🍽️ Fruity Fish Curry

Ingredients
- 1 bell pepper
- 2 spring onions
- 1 tbsp oil
- 350 g haddock fillet
- salt
- pepper (from the mill)
- curry powder
- 400 ml coconut milk (can, unsweetened)
- 250 g pineapple pieces
- 2 tbsp basil
- 4 tbsp soy sauce
Instructions
- 1. Wash the bell pepper, remove the stem and seeds, halve it, and cut the flesh into small cubes.
- 2. Wash the spring onions, slice them into rings, and sauté them together with the bell pepper in oil for about 8 minutes. Cut the fish into cubes and season with salt and pepper.
- 3. Add 1/2 teaspoon of curry powder to the vegetables and toast briefly. Pour in the coconut milk, bring to a boil, and add the fish cubes and pineapple pieces. Simmer covered for 5 minutes.
- 4. Add the basil and season the dish with soy sauce and a little more curry powder.
