  1. 1. Wash the fennel bulbs thoroughly.
  2. 2. Remove the green stalks and cut the vegetable into small cubes.
  3. 3. Peel the onion and chop it finely.
  4. 4. Heat the olive oil in a pan.
  5. 5. Sauté the onions in it until they are translucent.
  6. 6. Add the fennel cubes.
  7. 7. Sauté the vegetables over medium heat for about 5 minutes with a lid on.
  8. 8. Pour in the stock (meat or vegetable broth).
  9. 9. Let the mixture come to a brief boil.
  10. 10. Reduce the heat to low.
  11. 11. Simmer the vegetables for 6 to 8 minutes with a lid on.
  12. 12. Season with salt and pepper to taste.
  13. 13. Stir the parsley into the vegetables.
  14. 14. Peel the apples.
  15. 15. Halve the apples and remove the core.
  16. 16. Cut the apples into thick wedges.
  17. 17. Heat the butter in a separate pan.
  18. 18. Fry the apple wedges on all sides over medium heat.
  19. 19. Drizzle the apple syrup over the apples.
  20. 20. Turn the apple wedges so they are covered on all sides.
  21. 21. Heat the apples briefly over high heat.
  22. 22. Distribute the apple wedges onto four plates.
  23. 23. Add the fennel vegetables.
  24. 24. Sprinkle the dish with Gomasio (a sesame-salt mixture).
  25. 25. Serve the food immediately.
