🍽️ Fruity Fennel with Apples

Ingredients
- 4 large fennel bulbs
- 3 tbsp olive oil
- 1 small white onion
- salt
- pepper (from the mill)
- 100 ml vegetable stock
- 2 tbsp gomasio (from the health food store)
- 4 tbsp chopped parsley
- 4 Boskop apples
- 1 tbsp butter
- 2 tbsp apple syrup
Instructions
- 1. Wash the fennel bulbs thoroughly.
- 2. Remove the green stalks and cut the vegetable into small cubes.
- 3. Peel the onion and chop it finely.
- 4. Heat the olive oil in a pan.
- 5. Sauté the onions in it until they are translucent.
- 6. Add the fennel cubes.
- 7. Sauté the vegetables over medium heat for about 5 minutes with a lid on.
- 8. Pour in the stock (meat or vegetable broth).
- 9. Let the mixture come to a brief boil.
- 10. Reduce the heat to low.
- 11. Simmer the vegetables for 6 to 8 minutes with a lid on.
- 12. Season with salt and pepper to taste.
- 13. Stir the parsley into the vegetables.
- 14. Peel the apples.
- 15. Halve the apples and remove the core.
- 16. Cut the apples into thick wedges.
- 17. Heat the butter in a separate pan.
- 18. Fry the apple wedges on all sides over medium heat.
- 19. Drizzle the apple syrup over the apples.
- 20. Turn the apple wedges so they are covered on all sides.
- 21. Heat the apples briefly over high heat.
- 22. Distribute the apple wedges onto four plates.
- 23. Add the fennel vegetables.
- 24. Sprinkle the dish with Gomasio (a sesame-salt mixture).
- 25. Serve the food immediately.
