🥗 Fruity Salad with Celery

Ingredients
- 2 unpeeled oranges
- 1 apple (e.g. Boskop)
- 4 stalks celery
- 1 kiwi
- 60 g peeled walnut kernels
- 300 g plain yogurt
- 5 tbsp sour cream
- 1 tbsp walnut oil
- salt
- pepper (from the mill)
- 4 slices crispbread
- 100 g low-fat quark
Instructions
- 1. Peel the oranges. Remove the white pith as well. Carefully separate the fruit segments from the membranes. Catch the juice in a bowl.
- 2. Peel the apple. Cut it into quarters. Remove the core. Dice the flesh into small cubes. Toss the apple cubes with a little of the collected orange juice.
- 3. Wash the celery. Clean it. Slice it into thin, diagonal pieces.
- 4. Peel the kiwi. Cut it into quarters. Slice the quarters into thin rounds.
- 5. Roughly chop the nuts. Toast them in a hot pan without fat. Remove them from the pan. Set them aside.
- 6. Whisk the yogurt with the sour cream. Stir in the oil. Add 2 tablespoons of orange juice. Season the sauce with salt and pepper.
- 7. Distribute the yogurt sauce onto small plates or bowls.
- 8. Toss the celery with half of the orange segments. Add the apple. Add the kiwi. Add the toasted nuts.
- 9. Arrange the mixed salad on top of the yogurt sauce.
- 10. Spread cream cheese onto a crispbread.
- 11. Top the crispbread with the remaining orange segments.
- 12. Serve the salad and the topped crispbread.
