  1. 1. Peel the oranges. Remove the white pith as well. Carefully separate the fruit segments from the membranes. Catch the juice in a bowl.
  2. 2. Peel the apple. Cut it into quarters. Remove the core. Dice the flesh into small cubes. Toss the apple cubes with a little of the collected orange juice.
  3. 3. Wash the celery. Clean it. Slice it into thin, diagonal pieces.
  4. 4. Peel the kiwi. Cut it into quarters. Slice the quarters into thin rounds.
  5. 5. Roughly chop the nuts. Toast them in a hot pan without fat. Remove them from the pan. Set them aside.
  6. 6. Whisk the yogurt with the sour cream. Stir in the oil. Add 2 tablespoons of orange juice. Season the sauce with salt and pepper.
  7. 7. Distribute the yogurt sauce onto small plates or bowls.
  8. 8. Toss the celery with half of the orange segments. Add the apple. Add the kiwi. Add the toasted nuts.
  9. 9. Arrange the mixed salad on top of the yogurt sauce.
  10. 10. Spread cream cheese onto a crispbread.
  11. 11. Top the crispbread with the remaining orange segments.
  12. 12. Serve the salad and the topped crispbread.
