🍽️ Fruity Arugula and Onion Salad

Ingredients
- 2 Oranges
- 1 Grapefruit
- 1 tbsp Honey
- 4 tbsp Olive oil
- 2 tbsp white balsamic vinegar
- Salt
- Pepper
- 8 red Onions
- 100 g Arugula
Instructions
- 1. Peel the oranges and the grapefruit completely.
- 2. Cut the flesh out of the fruit to get the fillets.
- 3. Squeeze the remaining fruit pulp to extract the juice.
- 4. Mix the juice with the honey, 3 tablespoons of oil, and the balsamic vinegar.
- 5. Season the dressing mixture with salt and pepper.
- 6. Peel the onions and cut them into wedges.
- 7. Heat the remaining oil in a frying pan.
- 8. Fry the onion wedges on low heat for 4 to 5 minutes until golden brown.
- 9. Mix the warm onions with the prepared dressing.
- 10. Let the onion-dressing mixture cool down to lukewarm.
- 11. Wash the arugula thoroughly.
- 12. Remove tough stems and tear the leaves into smaller pieces if necessary.
- 13. Mix the arugula and the fruit fillets with the cooled onions.
- 14. Taste the salad one last time and adjust the seasoning.
- 15. Serve the salad.
