  1. 1. Peel the oranges and the grapefruit completely.
  2. 2. Cut the flesh out of the fruit to get the fillets.
  3. 3. Squeeze the remaining fruit pulp to extract the juice.
  4. 4. Mix the juice with the honey, 3 tablespoons of oil, and the balsamic vinegar.
  5. 5. Season the dressing mixture with salt and pepper.
  6. 6. Peel the onions and cut them into wedges.
  7. 7. Heat the remaining oil in a frying pan.
  8. 8. Fry the onion wedges on low heat for 4 to 5 minutes until golden brown.
  9. 9. Mix the warm onions with the prepared dressing.
  10. 10. Let the onion-dressing mixture cool down to lukewarm.
  11. 11. Wash the arugula thoroughly.
  12. 12. Remove tough stems and tear the leaves into smaller pieces if necessary.
  13. 13. Mix the arugula and the fruit fillets with the cooled onions.
  14. 14. Taste the salad one last time and adjust the seasoning.
  15. 15. Serve the salad.
