🍽️ Mango Mozzarella Salad with Lemongrass Dressing

Ingredients
- 1 stalk lemongrass
- 1 red chili pepper
- 2 tsp grated lemon zest
- 2 lemons (juice)
- 2 tbsp walnut oil
- 2 tbsp olive oil
- 2 tsp cane sugar
- salt
- 1 tbsp chopped cilantro
- 1 mango
- 2 balls mozzarella (125 g each)
- 50 g unsalted, chopped cashew nuts
Instructions
- 1. Cut off the tough, woody ends of the lemongrass.
- 2. Take out the soft inner part and chop it very finely.
- 3. Wash the chili pepper thoroughly.
- 4. Cut the pepper open.
- 5. Remove the inside with the seeds and all white membranes.
- 6. Cut the empty pepper into small cubes.
- 7. Mix the lemon juice with the two oils in a bowl.
- 8. Add the chopped lemongrass to the oil mixture.
- 9. Add the chili cubes.
- 10. Season the mixture with sugar and salt.
- 11. Stir in the coriander leaves.
- 12. Peel the mango.
- 13. Slice the flesh thinly off the pit.
- 14. Let the mozzarella drain well.
- 15. Slice the mozzarella as well.
- 16. Arrange the mango and mozzarella slices on the plates.
- 17. Drizzle the salad with the dressing.
- 18. Sprinkle the finished salad with cashew nuts.
- 19. Serve the salad.
