Ingredients
- 500 g carrots
- 1 pomegranate
- 3 tbsp pistachio kernels (à 15 g)
- 1 lemon
- 2 tbsp walnut oil
- 1 tsp agave nectar
- salt
- pepper
Instructions
- 1. Wash the carrots thoroughly.
- 2. Peel the carrots completely.
- 3. Use a vegetable peeler to slice the carrots into long, thin strips.
- 4. Carefully remove the seeds from the pomegranate fruit.
- 5. Roughly chop the pistachios.
- 6. Place the carrot strips, pomegranate seeds, and pistachios into a large bowl.
- 7. Squeeze the juice from one lemon.
- 8. Add the lemon juice, walnut oil, and agave syrup directly to the bowl with the salad.
- 9. Mix all ingredients thoroughly together.
- 10. Season the salad with salt and pepper to taste.
- 11. Let the finished salad marinate for 5 minutes.
- 12. Then serve the salad.
