🍽️ Fresh Matjes Salad with Melon

Ingredients
- 100 g arugula
- 1 red chili pepper
- 1.2 kg sweet melon (e.g. cantaloupe; 1 sweet melon)
- 2 tbsp light balsamic vinegar
- salt
- pepper
- 1 tsp cane sugar
- 4 tbsp olive oil
- 3 sprigs mint
- 400 g matjes fillets (4 matjes fillets)
Instructions
- 1. Wash the arugula thoroughly.
- 2. Spin the arugula dry in a salad spinner.
- 3. Trim off the thick stems from the arugula.
- 4. Wash the chili pepper.
- 5. Slice the chili pepper lengthwise.
- 6. Remove the seeds from the chili pepper.
- 7. Rinse the chili pepper again if necessary.
- 8. Finely chop the chili pepper.
- 9. Cut the melon in half.
- 10. Scoop out the seeds from the melon with a spoon.
- 11. Cut the melon into wedges.
- 12. Peel the melon wedges.
- 13. Cut the melon flesh into large chunks.
- 14. Place the melon chunks and arugula in a bowl.
- 15. Whisk the balsamic vinegar with salt, pepper, and sugar.
- 16. Stir until the salt and sugar have dissolved.
- 17. Stir the olive oil into the vinegar mixture.
- 18. Wash the mint.
- 19. Shake the mint dry.
- 20. Pluck the mint leaves from the stems.
- 21. Chop the mint leaves coarsely.
- 22. Stir the chopped mint and chili into the salad dressing.
- 23. Rinse the matjes fillets.
- 24. Pat the matjes fillets dry with kitchen paper.
- 25. Cut the matjes fillets into pieces about 2 cm in size.
- 26. Add the matjes pieces to the arugula and melon.
- 27. Drizzle the salad with the dressing.
- 28. Serve the finished matjes salad.
