  3. 3. Trim off the thick stems from the arugula.
  4. 4. Wash the chili pepper.
  5. 5. Slice the chili pepper lengthwise.
  6. 6. Remove the seeds from the chili pepper.
  7. 7. Rinse the chili pepper again if necessary.
  8. 8. Finely chop the chili pepper.
  9. 9. Cut the melon in half.
  10. 10. Scoop out the seeds from the melon with a spoon.
  11. 11. Cut the melon into wedges.
  12. 12. Peel the melon wedges.
  13. 13. Cut the melon flesh into large chunks.
  14. 14. Place the melon chunks and arugula in a bowl.
  15. 15. Whisk the balsamic vinegar with salt, pepper, and sugar.
  16. 16. Stir until the salt and sugar have dissolved.
  17. 17. Stir the olive oil into the vinegar mixture.
  18. 18. Wash the mint.
  19. 19. Shake the mint dry.
  20. 20. Pluck the mint leaves from the stems.
  21. 21. Chop the mint leaves coarsely.
  22. 22. Stir the chopped mint and chili into the salad dressing.

  24. 24. Pat the matjes fillets dry with kitchen paper.
  25. 25. Cut the matjes fillets into pieces about 2 cm in size.
  26. 26. Add the matjes pieces to the arugula and melon.
  27. 27. Drizzle the salad with the dressing.
