🍽️ Fruity Cabbage Salad with Blueberries

Ingredients
- 500 g Red Cabbage (0.25 Red Cabbage)
- Salt
- 1 tart Apple
- 250 g Blueberries
- 2 tbsp Apple Cider Vinegar
- 2 tbsp Lemon Juice
- 4 tbsp Apple Juice
- 1 tbsp Maple Syrup
- Pepper
- 1 tbsp Rapeseed Oil
Instructions
- 1. Thoroughly wash the cabbage under running water.
- 2. Remove the hard core from the head.
- 3. Shred the cabbage leaves finely.
- 4. Add one teaspoon of salt to the shredded cabbage.
- 5. Mix the cabbage and salt thoroughly together.
- 6. Let the cabbage sit for 15 to 20 minutes.
- 7. Mix the cabbage repeatedly during this time.
- 8. Wash the apple under running water.
- 9. Cut the apple into four quarters.
- 10. Remove the core from the apple pieces.
- 11. Cut the apple pieces into thin wedges.
- 12. Rinse the blueberries carefully.
- 13. Pat the blueberries dry with a cloth.
- 14. Pour the vinegar into a small bowl.
- 15. Add the lemon juice.
- 16. Add the apple juice.
- 17. Add the maple syrup.
- 18. Season the mixture with pepper.
- 19. Add the oil.
- 20. Whisk all ingredients for the vinaigrette well.
- 21. Pour the vinaigrette over the drained cabbage.
- 22. Add the cut apples.
- 23. Add the blueberries.
- 24. Mix everything together carefully.
- 25. Season the salad with salt.
- 26. Season the salad with additional pepper.
- 27. Fill the salad into four glasses.
