  1. 1. Peel the orange with a sharp knife and remove all white pith. Carefully cut out the segments along the membranes, catching the juice as you go. Finally, squeeze the remaining peel to extract the last drops of juice.
  2. 2. In a bowl, whisk the collected orange juice with the sour cream, honey, a pinch of salt, some pepper, and the sesame oil. Taste the dressing and adjust the seasoning if needed.
  3. 3. Thoroughly wash the vegetables and remove any tough stems. Cut the kale into very fine strips. Coarsely grate the carrots and apples.
  4. 4. Add the prepared, chopped vegetables to the bowl with the dressing. Toss everything well together and taste the mixture again to adjust the seasoning.
  5. 5. Sprinkle the finished salad with sesame seeds. Garnish the top with the orange segments you cut out earlier.
