🍽️ Fruity Spiced Rice

Ingredients
- 1 onion
- 1 carrot
- 4 oranges
- 1 tbsp sesame oil
- 150 g cooked brown rice
- 300 ml vegetable broth
- 0.5 tsp ground coriander
- 0.5 tsp ground cardamom
- 0.5 tsp ground cinnamon
- salt
- pepper (from the mill)
- 2 tbsp raisins
- parsley
Instructions
- 1. Peel the onion and cut it into thin strips. Peel the carrot, wash it, and cut it into very thin, two-centimeter-long sticks. Juice three oranges and measure out exactly 150 milliliters of the juice.
- 2. Heat the oil in a large pan. Sauté the onions and carrots in it while stirring. Wash the rice, add it to the pan, and sauté it for about three minutes.
- 3. Pour in the vegetable broth and the orange juice. Add coriander, cinnamon, cardamom, salt, and pepper. Cover the pot and let the rice cook on low heat for about 40 minutes.
- 4. Peel the remaining orange thickly, removing all the white pith. Carefully separate the orange segments from the membranes and catch the released juice in a small bowl. Soak the raisins in this juice.
- 5. Season the finished rice with salt and pepper. Fold in the orange segments and the soaked raisins, and let the mixture rest for another five minutes. Serve the rice garnished with fresh parsley.
