  1. 1. Wash the arugula, remove any damaged leaves, and dry it thoroughly. Blanch the peaches briefly in boiling water, peel off the skin, and cut the flesh into wedges. Slice the chicken meat into thin pieces.
  2. 2. Peel the shallot and chop it very finely. Whisk vinegar, honey, oil, salt, and pepper together in a bowl and stir in the chopped shallot.
  3. 3. Toss the peach pieces, chicken slices, and almonds with the vinaigrette (a sauce made from oil and acid). Divide the mixture among glasses or small bowls and serve garnished with fresh arugula.
