🍽️ Fruity Frisée Salad with Chicken Breast

Ingredients
- 1 ripe mango
- 1 ripe avocado
- 2 tbsp lemon juice
- 2 chicken breast fillets
- 2 tbsp oil
- salt
- pepper (from the mill)
- 150 g frisée salad
- 2 tbsp white wine vinegar
- 3 tbsp olive oil
- lemon balm (for garnishing)
Instructions
- 1. Peel the mango and cut the flesh into thick slices away from the pit. Then cut these slices into cubes.
- 2. Halve the avocado and remove the pit. Peel the avocado, dice it as well, and mix it with lemon juice.
- 3. Wash the frisée lettuce, remove damaged or wilted leaves, and spin it dry. Tear the leaves into smaller pieces if necessary.
- 4. Brush the chicken breast with oil and season with salt and pepper. Fry it in a grill pan for about 5 minutes on each side over medium heat.
- 5. Whisk vinegar with a little salt, pepper, and olive oil. Toss the frisée lettuce, mango, and avocado in the dressing. Divide the salad among plates. Slice the chicken breast crosswise into strips and arrange them on top. Garnish with lemon balm. Serve with pita chips if desired.
