🍽️ Crisp Corn Salad with Mandarins

Ingredients
- 100 g corn salad
- 1 clementine
- 2 tbsp orange juice
- 2 tbsp whey
- 1 tsp honey
- 2 tsp sunflower seeds
- 1 tbsp grape seed oil
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the corn salad under running water.
- 2. Remove all tough or woody stems from the salad.
- 3. Dry the corn salad thoroughly.
- 4. Cut the salad leaves into bite-sized pieces.
- 5. Peel the mandarins completely.
- 6. Break the mandarins into small pieces.
- 7. Pour the orange juice into a separate bowl.
- 8. Add the whey to the bowl.
- 9. Add the honey to the bowl.
- 10. Add the oil to the bowl.
- 11. Season the mixture with salt.
- 12. Season the mixture with pepper.
- 13. Whisk all ingredients until you have a smooth dressing.
- 14. Put the sunflower seeds in a pan.
- 15. Toast the seeds without adding extra fat.
- 16. Remove the pan from the heat as soon as the seeds are fragrant.
- 17. Put the corn salad in a large bowl.
- 18. Add the mandarin pieces to the salad.
- 19. Pour the dressing over the salad.
- 20. Gently toss the salad with the dressing.
- 21. Plate the salad.
- 22. Sprinkle the toasted sunflower seeds over the salad.
