🍽️ Sweet and Sour Curry Mango Ketchup

Ingredients
- 1.5 kg tomatoes
- 2 onions
- 1 garlic clove
- 1 small mango (300 g)
- 2 tbsp olive oil
- 3 tbsp maple syrup
- 1 tbsp mustard seeds
- 1 tsp mild curry powder
- 4 tbsp tomato paste (60 g)
- 70 ml orange juice
- 2 tbsp apple cider vinegar
- salt
- pepper
- 0.25 tsp smoked paprika powder
- 1 pinch cinnamon
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Remove the hard stem area from the tomatoes.
- 3. Cut the tomatoes into bite-sized pieces.
- 4. Peel the onions.
- 5. Peel the garlic.
- 6. Finely chop the onions and garlic.
- 7. Peel the mango.
- 8. Remove the mango flesh from the pit.
- 9. Cut the mango flesh into small cubes.
- 10. Heat the oil in a pot.
- 11. Sauté the onions, garlic, and mango over medium heat for 2 minutes.
- 12. Add the maple syrup.
- 13. Let the mixture caramelize slightly while stirring for 5 minutes.
- 14. Add mustard seeds and curry powder.
- 15. Sauté everything for 3 minutes.
- 16. Add the tomatoes, tomato paste, orange juice, and vinegar.
- 17. Let the mixture simmer on low heat for about 30 minutes, stirring occasionally.
- 18. Season the ketchup with salt, pepper, paprika powder, and cinnamon.
- 19. Place the tomato mixture into the blending container.
- 20. Secure the lid on the container.
- 21. Select the Smoothie program.
- 22. Start the blending process with a button press.
- 23. Blend the ketchup until it has a fine consistency.
- 24. Use the tamper to assist during blending if necessary.
- 25. Remove the lid after blending.
- 26. Fill the ketchup into clean, sterilized (boiled) bottles.
- 27. Seal the bottles tightly.
