🍽️ Fruity Chicory Salad with Yogurt Dressing and Pumpkin Seeds

Ingredients
- 4 chicory
- 2 ripe oranges
- 1 tart apple
- 1 tbsp lemon juice
- 150 g yogurt
- salt
- white pepper (from the mill)
- pumpkin seeds
Instructions
- 1. Separate the chicory into individual leaves.
- 2. Halve the heads lengthwise if they are very large.
- 3. Wash the leaves thoroughly.
- 4. Spin them dry.
- 5. Peel the oranges with a sharp knife.
- 6. Remove all white pith completely.
- 7. Cut out the fillets along the membranes.
- 8. Catch the released juice in a bowl.
- 9. Squeeze the remaining orange peel.
- 10. Wash the apple.
- 11. Halve the apple.
- 12. Remove the core.
- 13. Slice the flesh into thin slices.
- 14. Drizzle the apple slices with lemon juice immediately.
- 15. Whisk the yogurt with the collected orange juice.
- 16. Season the dressing with salt.
- 17. Season the dressing with pepper.
- 18. Arrange the chicory on plates.
- 19. Distribute the orange fillets over the top.
- 20. Distribute the apple slices over the top.
- 21. Drizzle the yogurt dressing over the salad.
- 22. Sprinkle the salad with pumpkin seeds.
- 23. Serve the salad immediately.
