🍽️ Fruity Leaf Salad with Raspberry Dressing

Ingredients
- 150 ml orange juice
- 1 tbsp Dijon mustard
- 2 tbsp balsamic vinegar
- salt
- black pepper
- 100 g raspberries
- 4 tbsp cold-pressed rapeseed oil
- 175 g small romaine lettuce (1 small romaine lettuce)
- 150 g small radicchio (1 small radicchio)
Instructions
- 1. Pour the orange juice into a small saucepan.
- 2. Boil the juice over high heat until it reduces to about one-third of the original amount.
- 3. Stir the reduced juice until smooth with mustard, vinegar, salt, and pepper.
- 4. Sort through the raspberries and set aside a few nice ones for decoration.
- 5. Add the remaining raspberries to the sauce and mash them slightly.
- 6. Whisk the sauce thoroughly with a whisk.
- 7. Slowly beat in the rapeseed oil while continuing to stir.
- 8. Wash the romaine lettuce and the radicchio.
- 9. Dry the greens in a salad spinner.
- 10. Cut the greens into bite-sized pieces.
- 11. Toss the greens in a bowl with the raspberry dressing.
- 12. Garnish the salad with the reserved raspberries.
- 13. Serve the fruity leaf salad with raspberry dressing.
