  2. 2. Boil the juice over high heat until it reduces to about one-third of the original amount.
  3. 3. Stir the reduced juice until smooth with mustard, vinegar, salt, and pepper.
  4. 4. Sort through the raspberries and set aside a few nice ones for decoration.
  5. 5. Add the remaining raspberries to the sauce and mash them slightly.
  6. 6. Whisk the sauce thoroughly with a whisk.
  7. 7. Slowly beat in the rapeseed oil while continuing to stir.
  8. 8. Wash the romaine lettuce and the radicchio.
  9. 9. Dry the greens in a salad spinner.
  10. 10. Cut the greens into bite-sized pieces.
  11. 11. Toss the greens in a bowl with the raspberry dressing.
  12. 12. Garnish the salad with the reserved raspberries.
