  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Cut the turkey breast into uniform cubes.
  4. 4. Wash the peaches thoroughly.
  5. 5. Halve the peaches and remove the pit.
  6. 6. Cut the peach flesh into cubes as well.
  7. 7. Wash the bell pepper.
  8. 8. Halve the pepper and remove the core (seeds and membranes).
  9. 9. Cut the pepper into bite-sized pieces.
  10. 10. Thread the turkey cubes, peach pieces, and pepper pieces onto the wooden skewers in an alternating pattern.
  11. 11. Brush the skewers with some oil.
  12. 12. Preheat the grill.
  13. 13. Place the skewers on the hot grill.
  14. 14. Grill the skewers for about 6 to 8 minutes.
  15. 15. Turn the skewers once during grilling.
  16. 16. Peel the mango.
  17. 17. Carefully cut the flesh away from the pit.
  18. 18. Dice the mango flesh finely.
  19. 19. Heat some oil in a small pan.
  20. 20. Add the chili and garlic to the hot pan.

  22. 22. Add the diced mango and honey to the pan.
  23. 23. Deglaze the mixture with a splash of water.
  24. 24. Season the sauce with soy sauce.
  25. 25. Season the sauce with fish sauce.
  26. 26. Remove the pan from the heat.
  27. 27. Arrange the grilled skewers on plates.
  28. 28. Drizzle some of the mango sauce over the skewers.
  29. 29. Sprinkle some salt over the skewers.
  30. 30. Sprinkle chili flakes over the skewers.
  31. 31. Pour the remaining sauce into small bowls.
  32. 32. Serve the sauce separately alongside the skewers.
