🍽️ Fruity Potato Soup

Ingredients
- 400 g potatoes (floury)
- 400 g celeriac
- 2 tbsp butter
- salt
- pepper (from the mill)
- 1 l vegetable broth
- 4 slices dark bread (200 g)
- 1 tart apple
- 2 tbsp chive rings
- 1 tbsp lemon juice
- 50 g diced beef ham
Instructions
- 1. Wash the potatoes and celery thoroughly.
- 2. Peel the potatoes and celery.
- 3. Cut the vegetables into small cubes.
- 4. Heat one tablespoon of butter in a pot.
- 5. Sauté the vegetables in the hot butter.
- 6. Season the vegetables with salt and pepper.
- 7. Pour the broth into the pot.
- 8. Bring the soup to a boil.
- 9. Place the lid on the pot.
- 10. Let the soup simmer gently for about 25 minutes.
- 11. Cut the bread into small cubes.
- 12. Peel the apple.
- 13. Cut the apple into quarters.
- 14. Remove the core from the apple pieces.
- 15. Slice the apple pieces into wedges.
- 16. Fry the bread cubes in the remaining butter until crispy.
- 17. Puree the finished soup until smooth.
- 18. Season the soup with lemon juice, salt, and pepper.
- 19. Add the apple wedges to the soup.
- 20. Bring the soup to a brief boil.
- 21. Sprinkle chives, ham, and the toasted bread cubes over the soup.
