  6. 6. Remove the rind from the cheese.
  7. 7. Cut the cheese into small cubes.
  8. 8. Heat the butter in a pot.
  9. 9. Add the finely chopped shallot to the hot butter.
  10. 10. Sauté the shallot until it is translucent and soft.
  11. 11. Add the diced apples to the pot.
  12. 12. Sauté the apples briefly together with the shallot.
  13. 13. Add the cider to the pot.
  14. 14. Add the milk to the pot.
  15. 15. Add the cream to the pot.
  16. 16. Add the cheese cubes to the pot.
  17. 17. Heat the mixture until it is warm.
  18. 18. Stir constantly until the cheese is completely melted.
  19. 19. Whip the soup frothy with an immersion blender.
  20. 20. Season the soup to taste.
  21. 21. Slice thin slices from the apple.
  22. 22. Prepare some fresh thyme.
