🍽️ Fruity Cheese Soup

Ingredients
- 1 apple
- 1 shallot
- 2 tbsp butter
- 300 g cheddar
- 200 ml cider
- 300 ml milk
- 300 g whipping cream
- salt
- pepper (from the mill)
- apple slice
- thyme
Instructions
- 1. Peel the apple.
- 2. Cut the apple into quarters and remove the core.
- 3. Dice the apple flesh into small cubes.
- 4. Peel the shallot.
- 5. Finely chop the shallot.
- 6. Remove the rind from the cheese.
- 7. Cut the cheese into small cubes.
- 8. Heat the butter in a pot.
- 9. Add the finely chopped shallot to the hot butter.
- 10. Sauté the shallot until it is translucent and soft.
- 11. Add the diced apples to the pot.
- 12. Sauté the apples briefly together with the shallot.
- 13. Add the cider to the pot.
- 14. Add the milk to the pot.
- 15. Add the cream to the pot.
- 16. Add the cheese cubes to the pot.
- 17. Heat the mixture until it is warm.
- 18. Stir constantly until the cheese is completely melted.
- 19. Whip the soup frothy with an immersion blender.
- 20. Season the soup to taste.
- 21. Slice thin slices from the apple.
- 22. Prepare some fresh thyme.
- 23. Decorate the finished soup with the apple slices.
- 24. Add some thyme as a garnish.
