🍽️ Sweet and Sour Chicken Skewers with Pineapple Dip

Ingredients
- 600 g chicken breast fillet
- 100 g cornflakes
- salt
- pepper
- 70 g flour
- 1 egg
- 1 small pineapple
- 1 yellow bell pepper
- 4 shallots
- 3 tbsp vegetable oil
- 15 g ginger (1 piece)
- 2 garlic cloves
- 300 ml soy sauce
- 2 tbsp lime juice
- 2 stalks coriander
- 8 wooden skewers
Instructions
- 1. Rinse the chicken breast fillet under cold water.
- 2. Pat the meat dry with kitchen paper.
- 3. Cut the chicken meat into bite-sized cubes.
- 4. Put the cornflakes into a freezer bag.
- 5. Crush the cornflakes coarsely with a rolling pin.
- 6. Season the chicken pieces with salt and pepper.
- 7. Coat the meat pieces in flour first.
- 8. Then dip them into beaten egg.
- 9. Finally roll them in the cornflake crumbs.
- 10. Press the coating firmly onto the meat.
- 11. Peel the pineapple.
- 12. Cut the pineapple in half.
- 13. Remove the hard core.
- 14. Slice the pineapple into thin slices.
- 15. Wash the bell pepper.
- 16. Cut the bell pepper in half.
- 17. Remove the core.
- 18. Cut the pepper into bite-sized pieces.
- 19. Peel the shallots.
- 20. Halve or quarter the shallots.
- 21. Thread the shallots, pineapple, pepper, and chicken alternately onto the wooden skewers.
- 22. Heat two tablespoons of oil in a pan.
- 23. Fry the skewers on all sides until golden brown over high heat.
- 24. Reduce the heat.
- 25. Let the skewers cook through over low heat.
- 26. Peel the ginger.
- 27. Peel the garlic cloves.
- 28. Finely chop the ginger and garlic.
- 29. Heat the remaining oil in a pot.
- 30. Sauté the ginger and garlic over medium heat.
- 31. Deglaze the mixture with soy sauce.
- 32. Season the dip with lime juice and pepper.
- 33. Remove the pot from the heat.
- 34. Let the dip cool down.
- 35. Wash the coriander.
- 36. Shake the coriander dry.
- 37. Pluck the coriander leaves.
- 38. Arrange the skewers on four plates.
- 39. Garnish the skewers with fresh coriander.
- 40. Serve the dip alongside.
