  3. 3. Wash the snow peas.
  4. 4. Remove the tough ends and strings from the snow peas.
  5. 5. Heat a frying pan.
  6. 6. Sear the chicken pieces in the hot pan for 2 to 3 minutes.
  7. 7. Add the finely chopped shallot to the pan.
  8. 8. Add the prepared snow peas to the pan.
  9. 9. Press the garlic directly into the pan.
  10. 10. Cook everything for another 5 minutes, stirring constantly.
  11. 11. Cut off the peel from the orange.
  12. 12. Remove all white pith from the orange peel.
  13. 13. Carefully cut the orange flesh segments out of the membranes.
  14. 14. Catch the released orange juice in a bowl.
  15. 15. Cut a small piece of the orange peel into thin strips.
  16. 16. Whisk together the sherry, soy sauce, collected orange juice, flour, and ginger in a small bowl.
  17. 17. Pour the sauce into the pan.
  18. 18. Bring the sauce to a boil while stirring.
  19. 19. Season the sauce with salt and pepper.
  20. 20. Add the orange flesh segments to the pan.
  21. 21. Add the orange peel strips to the pan.
  22. 22. Serve the dish immediately.
