🍽️ Fruity and Savory Pearl Barley Salad

Ingredients
- 300 g Pearl Barley
- 1 Onion
- 100 g Olives
- 2 tbsp Capers
- 2 Blood Oranges
- 3 tbsp White Wine Vinegar
- 6 tbsp Olive Oil
- Salt
- Pepper (from the mill)
Instructions
- 1. Rinse the pearl barley thoroughly under running water in a sieve.
- 2. Place the pearl barley in a pot and add 750 ml of water.
- 3. Bring the water to a boil.
- 4. Reduce the heat to low and cover the pot.
- 5. Let the pearl barley simmer for 25 minutes.
- 6. Drain the cooked pearl barley.
- 7. Allow the pearl barley to cool down completely.
- 8. Peel the onion.
- 9. Dice the onion into small cubes.
- 10. Remove the flesh of the olives from the pits.
- 11. Grate the zest from half an orange using a zester.
- 12. Peel the remaining orange with a sharp knife.
- 13. Remove all white pith while peeling.
- 14. Cut out the orange segments along the membranes.
- 15. Catch the released juice in a bowl.
- 16. Squeeze the remaining orange pulp by hand.
- 17. Whisk the collected orange juice with vinegar.
- 18. Add oil, salt, and pepper.
- 19. Stir everything well to emulsify the sauce.
- 20. Mix the cooled pearl barley with the diced onions.
- 21. Add the olives and capers.
- 22. Fold in the orange segments.
- 23. Pour the prepared sauce over the salad.
- 24. Sprinkle the finished salad with the orange zest.
- 25. Serve the salad immediately.
