🍽️ Crispy Fried Chicken with Coconut

Ingredients
- 600 g chicken breast fillet
- 1 tsp curry powder
- salt
- pepper (from the mill)
- 3 tbsp flour
- 2 eggs
- 100 g coconut flakes
- vegetable oil for frying (or coconut fat)
Instructions
- 1. Rinse the chicken meat under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the chicken into bite-sized pieces.
- 4. Season the meat pieces with curry, salt, and pepper.
- 5. Coat the seasoned pieces in flour until lightly covered.
- 6. Whisk the eggs well in a deep plate.
- 7. Fill the coconut flakes into a separate deep plate.
- 8. Dip the floured chicken pieces into the beaten eggs.
- 9. Coat the egg-covered pieces in the coconut flakes.
- 10. Heat oil in a pan or pot.
- 11. Fry the chicken portions in batches in the hot oil.
- 12. Fry each piece for about 2 to 3 minutes until golden brown.
- 13. Let the fried chicken drain on kitchen paper.
- 14. Serve the chicken with salad and onions as desired.
