Ingredients
- 200 g flour
- 1 egg
- 1 egg yolk
- 200 ml water
- salt
- 600 g mixed vegetables (cut into bite-sized pieces)
- oil (for frying)
- lemon juice
Instructions
- 1. Whisk 100 grams of flour with the egg, the egg yolk, some water, and salt until you have a smooth batter.
- 2. Let the batter rest for a few minutes.
- 3. Preheat a deep fryer to 180 degrees Celsius.
- 4. Alternatively: Heat oil in a pot until it is hot.
- 5. Check the oil temperature by placing the handle of a wooden spoon into it.
- 6. The oil is ready when small bubbles rise around the handle.
- 7. Coat the vegetables in the remaining flour.
- 8. Dip the floured vegetables into the batter.
- 9. Fry the vegetables in the deep fryer until golden yellow.
- 10. Let the finished vegetables drain on a sieve.
- 11. Drizzle the vegetables with lemon juice.
- 12. Serve the fried vegetables immediately.
