🍽️ Crispy Fried Smelt

Ingredients
- 1 kg small whitebait (kitchen-ready, cleaned and scaled)
- Salt
- Pepper (from the mill)
- Flour (for dusting)
- 2 Eggs
- 75 g Flour
- 75 g finely chopped walnuts
- 1 l Oil
Instructions
- 1. Heat the frying oil in the deep fryer or in a large pot to 180 degrees Celsius.
- 2. Check the oil temperature by holding the end of a wooden stick into the oil.
- 3. Wait until small bubbles rise from the wooden stick, then the oil is ready.
- 4. Rinse the fish thoroughly.
- 5. Pat the fish completely dry with a kitchen towel.
- 6. Season the fish with salt and pepper.
- 7. Roll the fish briefly in flour.
- 8. Whisk the eggs in a shallow bowl.
- 9. Mix the remaining flour with the nuts on a plate.
- 10. Dip the floured fish first into the whisked eggs.
- 11. Then roll the fish in the nut-flour mixture.
- 12. Fry the fish in batches in the hot oil.
- 13. Fry them for about 5 minutes.
- 14. Remove the fish from the oil when they are golden brown.
- 15. Keep the finished fish warm in the preheated oven.
- 16. Arrange the fried fish on mango or orange fillets.
