  2. 2. Cut the onions into rings about 2 centimeters wide.
  3. 3. Pour the buttermilk over the onion rings.
  4. 4. Let the onion rings marinate in the buttermilk for about 1 hour.
  5. 5. Mix the flour with the paprika and cayenne pepper.
  6. 6. Stir the mayonnaise smooth with the yogurt and lemon juice.
  7. 7. Peel the garlic.
  8. 8. Press the garlic through a press directly into the mayonnaise.
  9. 9. Finely chop the parsley and chives.
  10. 10. Add the chopped herbs to the mayonnaise.
  11. 11. Season the mayonnaise with salt and pepper.
  12. 12. Let the marinated onion rings drain well in a sieve.
  13. 13. Heat the oil in a pot to 180 degrees Celsius.
  14. 14. Check the oil temperature by holding a wooden stick in the oil: If small bubbles rise, the oil is ready.
