🍽️ Crispy Onion Rings with Herb Dip

Ingredients
- 2 large onions (approx. 400 g each)
- 500 ml buttermilk
- 1 tbsp paprika powder (sweet)
- 0.5 tsp cayenne pepper
- 200 g flour
- 4 tbsp mayonnaise
- 3 tbsp yogurt
- 2 tbsp lemon juice
- 2 garlic cloves
- 2 tbsp parsley
- 1 tbsp chives
- salt
- pepper (from the mill)
- oil (for frying)
Instructions
- 1. Peel the onions.
- 2. Cut the onions into rings about 2 centimeters wide.
- 3. Pour the buttermilk over the onion rings.
- 4. Let the onion rings marinate in the buttermilk for about 1 hour.
- 5. Mix the flour with the paprika and cayenne pepper.
- 6. Stir the mayonnaise smooth with the yogurt and lemon juice.
- 7. Peel the garlic.
- 8. Press the garlic through a press directly into the mayonnaise.
- 9. Finely chop the parsley and chives.
- 10. Add the chopped herbs to the mayonnaise.
- 11. Season the mayonnaise with salt and pepper.
- 12. Let the marinated onion rings drain well in a sieve.
- 13. Heat the oil in a pot to 180 degrees Celsius.
- 14. Check the oil temperature by holding a wooden stick in the oil: If small bubbles rise, the oil is ready.
- 15. Coat the onion rings in the seasoned flour mixture.
- 16. Shake off excess flour from the onion rings.
- 17. Fry the onion rings in the hot oil until golden brown.
- 18. Place the fried onion rings on kitchen paper to absorb excess fat.
- 19. Season the warm onion rings finally with salt and pepper.
- 20. Serve the crispy onion rings with the prepared herb dip.
