🍽️ Crispy Fried Onion Rings

Ingredients
- 500 g small onions
- 1 bunch parsley
- 3 tbsp grated Pecorino
- 2 eggs
- 100 ml milk
- 2 garlic cloves
- 100 g flour
- vegetable oil
- salt (pepper)
Instructions
- 1. Separate the eggs. Set the egg yolks aside.
- 2. Whisk the egg yolks with salt and pepper.
- 3. Stir in the flour and milk to the egg yolk mixture.
- 4. Add the cheese and the pressed garlic.
- 5. Let the batter rest for 30 minutes.
- 6. Peel the onions.
- 7. Blanch the onions for two minutes in salted water (cook briefly in boiling water).
- 8. Remove the onions from the water.
- 9. Let the onions drain.
- 10. Finely chop the parsley.
- 11. Beat the egg whites until stiff.
- 12. Gently fold the parsley into the batter.
- 13. Gently fold the egg whites into the batter.
- 14. Heat the oil.
- 15. Dip the onions one by one into the batter using a fork.
- 16. Lower the onions into the hot oil.
- 17. Fry the onions until golden brown.
- 18. Remove the onions with a slotted spoon.
- 19. Let the onions drain.
