  1. 1. Wash the squid and cut them into thick rings. Alternatively, you can simply cut them in half lengthwise.
  2. 2. Crack the eggs into a shallow bowl and whisk them well. Add a pinch of salt.
  3. 3. Prepare a second container with flour.
  4. 4. Coat the squid rings in the dry flour first. Shake off any excess flour.
  5. 5. Dip the floured rings into the egg mixture. Make sure they are fully coated.
  6. 6. Then coat the rings once more in the flour to create a nice crust.
  7. 7. Heat the frying oil in a pot or pan. Test the temperature by holding a wooden stick in the oil: If small bubbles rise, the oil is hot enough.
  8. 8. Fry the squid rings in batches in the hot oil until golden brown. Avoid overcrowding the pan so the temperature does not drop too much.
  9. 9. Remove the fried rings and place them on kitchen paper to absorb excess oil.
  10. 10. Serve the squid rings immediately while hot, accompanied by fresh lemon wedges.
