  1. 1. Peel the sweet potatoes.
  2. 2. Cut them into long, thin sticks.
  3. 3. Bring plenty of water with salt to a boil.
  4. 4. Cook the sweet potato sticks in it for 2 to 3 minutes (this is called blanching).
  5. 5. Drain the water.
  6. 6. Rinse the sticks with cold water to stop the cooking process.
  7. 7. Dry the sweet potatoes well.
  8. 8. Heat the frying oil in the deep fryer or a large pot.
  9. 9. Check the heat by holding a wooden stick in the oil: Bubbles should rise.
  10. 10. Fry the sweet potatoes in batches for about 4 minutes until golden yellow.
  11. 11. Place the finished sticks on kitchen paper to absorb excess oil.
  12. 12. Season them lightly with salt and pepper.
  13. 13. Serve the sticks in small baskets lined with a napkin.
  14. 14. Serve them with ketchup on the side if you like.
