🍽️ Crispy Potato Chips with Creamy Avocado Garlic Dip

Ingredients
- 1 ripe avocado
- 2 tbsp lemon juice
- 2 garlic cloves
- 2 tbsp parsley
- 200 g fresh mayonnaise
- salt
- pepper (from the mill)
- 250 g potatoes
- vegetable oil (for frying)
Instructions
- 1. Halve the avocado and remove the pit.
- 2. Scoop out the flesh and mash it with a fork until smooth.
- 3. Stir in the lemon juice.
- 4. Peel the garlic cloves.
- 5. Press the garlic into the avocado mixture.
- 6. Wash the parsley and chop it finely.
- 7. Mix the mayonnaise with the avocado-garlic mixture and the parsley.
- 8. Season the dip with salt and pepper to taste.
- 9. Keep the dip cool until serving time.
- 10. Wash the potato thoroughly.
- 11. Peel the potato.
- 12. Shred the potato into very thin strips.
- 13. Pat the potato strips dry with a kitchen towel.
- 14. Heat plenty of vegetable oil in a pot to 160 degrees Celsius.
- 15. Add the potato strips in batches to the hot oil.
- 16. Fry the potatoes until golden yellow and crispy.
- 17. Remove the finished potato chips with a slotted spoon.
- 18. Let the potato chips drain on kitchen paper.
- 19. Serve the warm potato chips together with the cold dip.
