🍽️ Crispy Fried Potato Balls

Ingredients
- 800 g starchy potatoes
- salt
- 2 egg yolks
- 2 tbsp freshly grated Parmesan
- 2 tbsp butter
- 1 tbsp wheat flour Type 1050
- pepper
- nutmeg
- vegetable oil for frying
- 100 g whole wheat breadcrumbs
Instructions
- 1. Peel the potatoes.
- 2. Boil the potatoes in salted water for about 30 minutes until tender.
- 3. Drain the cooking water.
- 4. Press the potatoes through a potato ricer.
- 5. Let the potatoes steam dry for a moment.
- 6. Mix the warm potatoes with the egg yolks, Parmesan, and butter to form a dough.
- 7. Add a little flour if needed until the dough stops sticking.
- 8. Season the mixture with salt, pepper, and nutmeg.
- 9. Heat the frying oil to 170 degrees Celsius.
- 10. Divide the dough into portions.
- 11. Form small balls (an ice cream scoop works best).
- 12. Fill a shallow plate with breadcrumbs.
- 13. Roll the balls in the breadcrumbs until fully coated.
- 14. Fry the balls in batches for 3 to 4 minutes in the hot oil until golden brown.
- 15. Place the finished balls on kitchen paper to drain excess oil.
