  4. 4. Press the potatoes through a potato ricer.
  5. 5. Let the potatoes steam dry for a moment.
  6. 6. Mix the warm potatoes with the egg yolks, Parmesan, and butter to form a dough.
  7. 7. Add a little flour if needed until the dough stops sticking.
  8. 8. Season the mixture with salt, pepper, and nutmeg.
  9. 9. Heat the frying oil to 170 degrees Celsius.
  10. 10. Divide the dough into portions.
  11. 11. Form small balls (an ice cream scoop works best).
  12. 12. Fill a shallow plate with breadcrumbs.
  13. 13. Roll the balls in the breadcrumbs until fully coated.
  14. 14. Fry the balls in batches for 3 to 4 minutes in the hot oil until golden brown.
  15. 15. Place the finished balls on kitchen paper to drain excess oil.
