  1. 1. Put flour, ghee, salt, thyme, and 175 milliliters of water into a bowl.
  2. 2. Knead the ingredients into a firm and pliable dough.
  3. 3. Let the dough rest covered for about 20 minutes.
  4. 4. Peel an onion and dice it into small cubes.
  5. 5. Heat ghee in a pot.
  6. 6. Fry cumin seeds over medium heat for about 1 minute.
  7. 7. Stir in ginger and all spices except salt.
  8. 8. Add the onions and the minced meat.
  9. 9. Fry the mixture until crumbly.
  10. 10. Add the apricots.
  11. 11. Fry everything for about 5 minutes, stirring occasionally.
  12. 12. Reduce the heat and place the lid on.
  13. 13. Simmer the filling for about 10 minutes.
  14. 14. Add 1/2 cup of water if necessary.
  15. 15. Season the filling with salt.
  16. 16. Let the filling cool down.
  17. 17. Divide the dough into 8 equal balls.
  18. 18. Oil a large wooden board.
  19. 19. Roll each dough ball into a round flatbread with a diameter of about 20 centimeters.
  20. 20. Cut each flatbread in half.
  21. 21. Fold one half of the flatbread at the straight edge.
  22. 22. Press the edges together firmly with moistened fingers to form a pocket.
  23. 23. Fill about 2 teaspoons of the filling into the pocket.
  24. 24. Seal the edges of the pocket with moistened fingers.
  25. 25. Repeat this process for all samosas.
  26. 26. Heat oil in a pot over medium heat.
  27. 27. Add the samosas in batches to the hot oil.
  28. 28. Fry them for about 3 to 4 minutes.
  29. 29. Turn the samosas once during frying.
  30. 30. Place the finished samosas on kitchen paper to absorb excess oil.
  31. 31. Keep the samosas warm until serving.
