🍽️ Crispy Shrimp with Fresh Lime Dip

Ingredients
- 6 large shrimp (approx. 300 g)
- 2 eggs
- 100 g flour
- 50 g coconut flakes
- 50 g breadcrumbs
- ghee (for deep frying)
- salt
- pepper (from the mill)
- 125 g mayonnaise
- 100 g crème fraîche
- 1 lime (juice and grated zest)
- 20 g freshly grated ginger
- 1 bunch cilantro
Instructions
- 1. Peel the shrimp and cut them in half lengthwise.
- 2. Remove the dark vein and rinse the shrimp under cold water.
- 3. Pat the shrimp dry carefully with a kitchen towel.
- 4. Cut the beef fillet into 12 narrow, long strips.
- 5. Remove the tough stems from the oyster mushrooms.
- 6. Wash the zucchini thoroughly and trim off the ends.
- 7. Slice the zucchini into 6 thin slices lengthwise.
- 8. Whisk mayonnaise and crème fraîche together in a bowl for the dip.
- 9. Finely grate the zest of a lime and squeeze out the juice.
- 10. Peel a small piece of ginger root and grate it finely.
- 11. Stir the lime zest, lime juice, and ginger into the cream mixture.
- 12. Wash fresh cilantro leaves and dry them well.
- 13. Chop the cilantro finely and fold it into the dip.
- 14. Season the dip finally with salt and black pepper.
- 15. Beat the eggs loosely in a shallow bowl.
- 16. Spread the flour on a shallow plate.
- 17. Spread the ground almonds on a second shallow plate.
- 18. Spread the breadcrumbs on a third shallow plate.
- 19. Season the shrimp, meat, and vegetables with salt and pepper.
- 20. Coat the pieces in the flour first until lightly covered.
- 21. Dip the floured pieces into the beaten eggs next.
- 22. Roll the egg-coated pieces in the almond and breadcrumb mixture.
- 23. Press the coating gently with your fingers to help it adhere.
- 24. Heat ghee in a large pan.
- 25. Fry the breaded pieces in batches in the pan.
- 26. Fry them for 2 to 3 minutes on each side until golden brown.
- 27. Place the fried shrimp on a tray lined with kitchen paper.
- 28. Let the excess fat drain off briefly.
- 29. Serve the shrimp warm or cold together with the lime dip.
