🍽️ Crispy Fried Spring Onions with Quark Dip

Ingredients
- 200 g flour
- 1 egg
- 1 egg yolk
- 200 ml water
- salt
- 600 g spring onions
- oil (for the deep fryer)
- lemon juice
- 200 g quark
- 3 tbsp whipping cream
- 2 tbsp lemon juice
- salt
- pepper (from the mill)
Instructions
- 1. Mix the quark with the cream and lemon juice. Season the mixture generously with salt and pepper. Pour the finished dip into small bowls.
- 2. Wash the spring onions thoroughly and remove the dry ends. Slice some of the green parts into thin rings and stir them into the quark dip.
- 3. Pat the remaining spring onions completely dry with a kitchen towel.
- 4. Mix 100 grams of flour with the egg, the yolk, some water, and a pinch of salt to form a smooth batter. Let this batter rest for a moment.
- 5. Preheat the deep fryer to 180 degrees. Alternatively, heat oil in a pot; it is ready when bubbles rise as soon as you hold the handle of a wooden spoon in it.
- 6. Coat the spring onions first in the remaining dry flour and then dip them through the batter. Fry them in batches until golden yellow in the hot oil, let them drain, and drizzle with lemon juice. Serve them together with the dip.
