🍽️ Crispy Fish Balls

Ingredients
- 3 large sheet Spring roll pastry (frozen) (frozen)
- 150 g Trout fillet (skinless)
- Salt
- Pepper (from the mill)
- 1 tbsp Lemon juice
- 1 tsp Sesame seeds
- 1 tsp Chives
- 400 ml Oil
- 1 tbsp Horseradish (freshly grated or jar)
- 3 tbsp Plain yogurt
- 1 tbsp Whipping cream
- 1 tsp Lemon juice
- Salt
- Pepper (from the mill)
- Pickled radish slice (jar, Asian market)
Instructions
- 1. Let the spring roll wrappers thaw at room temperature.
- 2. Wash the trout fillets under running water.
- 3. Pat the fillets dry with a kitchen towel.
- 4. Cut the fish meat into very small cubes.
- 5. Season the fish cubes with salt, pepper, and a splash of lemon juice.
- 6. Fold the sesame seeds into the fish mixture.
- 7. Fold the chopped chives into the fish mixture.
- 8. Shape the mixture into two firm balls.
- 9. Make sure the balls are approximately the same size.
- 10. Pour oil into a small pot.
- 11. Heat the oil on the stove.
- 12. Check the oil temperature by holding the handle of a wooden spoon in it.
- 13. The oil is ready when small bubbles form around the wooden handle.
- 14. Stack the thawed dough wrappers on top of each other.
- 15. Cut the stacks into thin strips.
- 16. Gently toss the dough strips.
- 17. Make sure the individual strips separate from each other.
- 18. Roll the fish balls in the dough strips.
- 19. Press the strips firmly onto the balls so they are well covered.
- 20. Place the breaded balls one by one into the hot oil.
- 21. Fry the balls until they are golden brown.
- 22. Fry the balls until they are crispy.
- 23. Place the finished balls on kitchen paper.
- 24. Let the kitchen paper absorb the excess fat.
- 25. Set the oven to 80 degrees Celsius.
- 26. Keep the balls warm in the preheated oven.
- 27. Place the drained horseradish in a bowl.
- 28. Stir the cream into the horseradish.
- 29. Stir the yogurt into the mixture.
- 30. Season the sauce with lemon juice.
- 31. Season the sauce with salt.
- 32. Season the sauce with pepper.
- 33. Whisk the mixture until creamy using a hand blender.
- 34. Whisk the mixture until it is frothy.
- 35. Place the drained horseradish on plates or small bowls.
- 36. Drizzle the horseradish yogurt over the horseradish.
- 37. Serve the fish balls immediately.
