  5. 5. Let the salted slices rest for about 20 minutes.
  6. 6. Heat the frying oil in a large pot to 170 degrees Celsius.
  7. 7. Pat the aubergine slices dry with a kitchen towel.
  8. 8. Fry the slices in the hot oil until golden yellow.
  9. 9. Remove the finished slices with a slotted spoon.
  10. 10. Place them on kitchen paper to absorb excess fat.
  11. 11. Finally, sprinkle the warm slices with sea salt.
