Ingredients
- 2 eggplants
- sea salt
- 400 ml vegetable oil (for deep frying)
Instructions
- 1. Wash the aubergines thoroughly under running water.
- 2. Remove the green stem ends at the top.
- 3. Slice the aubergines into paper-thin, even rounds.
- 4. Sprinkle the slices generously with salt.
- 5. Let the salted slices rest for about 20 minutes.
- 6. Heat the frying oil in a large pot to 170 degrees Celsius.
- 7. Pat the aubergine slices dry with a kitchen towel.
- 8. Fry the slices in the hot oil until golden yellow.
- 9. Remove the finished slices with a slotted spoon.
- 10. Place them on kitchen paper to absorb excess fat.
- 11. Finally, sprinkle the warm slices with sea salt.
- 12. Stack the aubergines on a plate and serve.
